Cue the Portlandia sketch. With 2 percent of Americans identifying as vegan (meaning eating foods with zero animal products), fast-food chain Chipotle Mexican Grill will offer a vegan burrito in its Pacific Northwest stores—the first major expansion of the option outside California. The burrito, to be called a Sofrita, is made with organic tofu instead of beef. Compared with older generations, high numbers of millennials do not consume meat, which perhaps explains why nearly one in three who order the Sofrita in California aren’t vegan, but rather want to cut meat out for ethical or health reasons.
