Why is this night different from all other nights? Maybe because there's no gefilte fish on the Passover table. While American Jews often have mixed feelings about the taste of gefilte fish, the dish has become a hallmark of Passover. However, gefilte fish will be absent from many tables this year because the extra long winter (thanks, polar vortex) ruined fishing conditions for the ingredients of gefilte fish: whitefish, carp, and pike. Now, many mom-and-pop stores are scrambling to supply gefilte fish and the ingredients for it. “What whitefish shortage?” shouted a clerk at Tauber's Fish in Williamsburg, Brooklyn. “There’s nothing, zip, zilch. A shortage means we have whitefish, but there’s nothing.”
